Yes, you read that title right. This is not a drill - chocolatey goodness will be delivered.

Yes yes, I know. I post a whole lot of chocolate recipes - but that simply sounds like a positive thing to me, no? It’s simply one of my absolute favorite flavors, so I can’t help but feel the impulse to always add chocolate to any dessert recipe that’s in the works. Ever since I aced my first chocolate chip cookie recipe over a year ago, it’s been my base model for any cookie recipe that I reinvent. Whether I make chocolate chip cookies or snickerdoodles, I am so glad that I have my perfect cookie base to make any cookie recipe a winner - and this one is absolutely - positively no exception.

Now allow me to paint the picture of this cold afternoon, when these particular cookies were developed and born: a week or two back (yup, that recent) was when my area received the remnants of Hurricane Mathew, making one day mid-week full of harsh rain, high winds, and even some lightning. My classes for the day were cancelled by 11, so I came back home and had the entire day to myself. Though there was no natural light to shoot, I still had an itch (and a craving) to get in the kitchen and whip something up. Something chocolatey, to be specific. So, I went forth and looked in my pantry and honestly, cookies just sound right. So, with a few ingredients, and a chopped bar of Alter Eco’s salted almond chocolate, I tweaked my original cookie recipe to make this one a double - chocolate explosion. And I can happily say that it was a success.

Just to let y’all know about why I use Alter Eco - when I add chocolate to any recipe, it’s almost always using Alter Eco - they have been my go-to, and my absolute favorite chocolate brand for a loooong time. I absolutely adore working with them, and they’re chocolate is kinda out of this world, too. But the best part about them is their purpose - they pride themselves in using wholesome and organic ingredients, working with small-scale farmers, and working on waste elimination. So it’s easy for me to say that I am proud to be an active partner with them, and hope that you guys take the initiative to try some of their amazing chocolate too!

Salted Almond Double Chocolate Chip Cookies

INGREDIENTS:

1 cup all purpose flour

1/4 cup cacao powder

1/2 tsp salt

1/4 tsp baking soda

1/2 tsp baking powder

2/3 cup coconut or brown sugar

1/3 cup melted coconut oil

1/4 cup warm water*

1 chopped Alter Eco salted almond chocolate bar

DIRECTIONS:

Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, cacao powder, salt, baking soda, and baking powder and set aside. In a smaller bowl, mix together the sugar, oil, and water. Add the wet mixture into the dry and mix until incorporated. Fold in the chopped chocolate. Then, scoop about a tablespoon’s worth of dough for each cookie - make sure to flatten the cookies a bit with your palm, once they’re on the baking sheet. Bake the cookies for 12-13 minutes, making sure they don’t burn from the bottom or become too crispy.

*make sure the water is warm because cold water will harden the coconut oil once they mix together, creating the wrong consistency for the wet mixture. Just use warm water from the faucet as I do.

As shown above, I always make sure to slightly flatten the raw cookies before placing into the oven so that they have a chance to flatten, since they don’t bake for too long. Just use your palm!
