Chocolate Brownie Oatmeal (vegan & gluten-free)

Have you ever woken up with a hunger for something sweet and not particularly healthy for breakfast? Maybe you felt like starting the day off with a big ol’ glazed donut, or maybe a fluffy blueberry muffin or a few squares of chocolate brownie. Well, this might be better than all three. And it’s healthy.

Since it’s been getting super duper chilly out (even her in NC!) I’ve been straying away from smoothies and cold breakfasts, and have been craving my comforting oatmeal bowls and pancakes. This porridge is not only chocolatey, but it’s so creamy and absolute bliss. It’s also sweetened with maple syrup, making it a perfect start to the morning.

Whenever I make this oatmeal, I add some chopped Alter Eco Chocolate while the oatmeal is still hot, making it melt all over the top. Just imagine THAT.

Yup, there’s no skimping here.

Chocolate Brownie Oatmeal

INGREDIENTS:

1/2 cup oats

1/4 cup cacao powder

2 Tbsp maple syrup

1 cup water

2 chopped squares of Alter Eco chocolate

DIRECTIONS:

Add all of the ingredients, besides the chocolate, to a saucepan and cook on the stovetop for about 5 minutes, or until the desired consistency is reached. You can also put the mixture into a microwave safe bowl, and cook in the microwave for two minutes. With both methods, just transfer into a serving bowl, and sprinkle the chopped chocolate on top and watch it melt!
