Cinnamon Spiced Doughnuts (vegan)

I’ve done it once, and I can do it again - baked doughnuts, here I come.

After making the double chocolate doughnuts, I have felt the urge to make maaaany more variations, and many more flavors. The next idea that I had was definitely one for the season - Cinnamon! It’s also one of my childhood favorites; I remember growing up and though I was always sad to see Summer leave, I was excited that with the coming of Autumn came apple cider doughnuts - and those are simply the best. No matter the week, there would always be a box of apple cider doughnuts on the kitchen counter - fluffy, cake like doughnuts that were rolled in sweet cinnamon sugar.

Again, they. are. the. best.

Yet, since being vegan for almost three years, I haven’t had a chance to have any of those sweet doughnuts during the Fall - yet this year, that has changed! It was actually the perfect afternoon - it was finally chilly out, and the batter came together instantly. After baking for only a few moments in the oven, they came out and after the very first trial, they needed no tweaking! Seriously, the first time and it was perfect.

So, are you convinced yet?

Cinnamon Spiced Doughnuts

INGREDIENTS:

1 cup all purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

1/3 cup apple sauce

1/3 cup maple syrup

1/4 cup water

1 Tbsp oil

1 1/2 Tbsp apple cider vinegar

GLAZE:

8 oz vegan cream cheese

3 Tbsp maple syrup

1/4 cup plant milk

INSTRUCTIONS:

Preheat your oven to 350F. In a medium bowl, whisk together the flour + baking soda + baking powder + salt + spices and set aside. In another bowl, mix together the remaining ingredients. Add your wet mixture to your dry and mix until everything if fully incorporated - but don’t over-mix! Fill your six - doughnut pan with the batter, and bake for 15 minutes. While the doughnuts are baking, mix together the ingredients for the cream cheese glaze. When you take the doughnuts out of the oven, give them a moment to cool before dipping into the glaze. I sprinkles mine with pecans, and I highly recommend you do the same!
