Double Chocolate Brownies (vegan)

Did someone say chocolate? Sign. me. up.

For however long I can remember, I have been an avid supporter, enthusiast, and connoisseur of chocolate. I have a specific memory from Kindergarten where I brought in a tray of vanilla cupcakes, and a tray of chocolate cupcakes, for my class to celebrate my birthday. It was a traditional that kids, including Summer babies (me) would be given a month where they can celebrate their birthdays with the class. So, as the considerate 5 year-old that I was, I brought in cupcakes. And as the generous 5 year-old that I was, I went around the class and let everybody choose their preferred flavor before I did. And, well, I vividly remember how everybody chose the chocolate ones, and as I was going around with an almost - still full tray of vanilla, there was just one chocolate left. And, of course, one of the last kids I went to picked that chocolate one. I went back to my seat, set the vanilla cupcake in front of me, and so began the waterfall of tears. I still remember how my teacher ran up to me to ask me what was wrong, and I said I love chocolate - I don't like vanilla. BUT JUST WAIT! The story has a happy ending - one of the kids that hadn’t touched their chocolate cupcake yet volunteered to switch with me. And so, I ended up getting the chocolate that I wanted.

Ya see? Chocolate and I have a history that runs DEEP.

So, needless to say, I love anything chocolate and cannot think of a time when that statement was not true.

So, as you can probably already guess, this recipe has me a tad bit excited. And also drooling.

Double Chocolate Brownies

INGREDIENTS:

1 cup all purpose flour

1/4 cup cacao powder

1/2 tsp baking soda

1/2 tsp salt

1 flax egg

1/3 cup melted coconut oil

2/3 cup coconut sugar

3 tbsp nut butter

1/2 tsp vinegar

1/4 cup warm water

1 chopped chocolate bar

DIRECTIONS:

Preheat your oven to 350F. Line and 8x8 baking pan with parchment paper, and set aside. In a medium bowl, whisk together your flour + cacao powder + baking soda + salt + sugar and set it aside. In a smaller bowl, combine your flax egg + melted coconut oil + nut butter + vinegar + warm water. Add the wet mixture to the dry and combine but don’t over-mix! Then, fold in your chopped chocolate and pour the batter into the pan. Bake your brownies for about 40-45 minutes. Bake them for a few extra minutes if you feel they need it, and then just let them cool before digging in.
