Double Chocolate Date-Sweetened Granola (vegan & gluten-free)

So, I mean, this is like the third chocolate post in a row - but who’s counting? I know i’m not - and hopefully y’all love all the chocolate goodness as much as I do too.
When I first went vegan, one of the very first recipes I made but simply never shared until recently is my date-sweetened granola - it’s one of the easiest recipes I have up my sleeve - and one of the healthiest, too. Though that one has already been shared on the blog - but this one might just be even better.
This is my double chocolate version - with plenty of chocolate to keep you excited. Cacao powder makes the entire mixture chocolate-y, and after the granola is baked, I always add an entire chopped chocolate bar to have it slightly melted - slightly solid amongst the granola mix. Sounds pretty good, right?

Double Chocolate Date - Sweetened Granola
I cup oats
1/2 cup nuts
2 Tbsp cacao powder
1/2 tsp salt
1/2 cup dates
1/2 cup water
1 chopped dark chocolate bar
Preheat your oven to 350F. Line baking sheet with parchment paper, and set aside. In a bowl, combine everything except for the dates + water + chocolate. Then, in a food processor, blend the dates with water until a paste forms. Add your date paste to the granola mix, and mix with a spoon until everything is fully incorporated. Place your granola on the baking sheet in an even layer, and bake for around 30 minutes, flipping halfway through. It may take less time, so check around the 20-25 minute mark. Once your granola is done, dump it all into a large bowl and add in your chopped chocolate - since the granola will still be warm, it will melt a bit of the chocolate, while the rest stays firm - and enjoy!
