The Best Chocolate Chip Cookies (vegan)
Alright, alright, I get it - I’m making a bold statement.
BUT HEAR ME OUT. These cookies are everything that you could be possibly looking for - crispy on the edges, chewy in the middle. They’re sweet without being overpowering, and include the perfect amount of melted chocolate. They’re not only super easy to whip up, but bake only a few minutes and come out perfect each. damn. time. Oh, did I mention they’re also healthier than 90% of the other chocolate chip cookie recipes out there?

Chocolate Chip Cookies
1 1/4 cup all purpose flour
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
2/3 cups coconut or brown sugar
1/3 cup melted coconut oil
1/4 cup warm water
1/3 cup chopped chocolate
Preheat your oven to 350F. Whisk together the flour + salt + baking soda + baking powder and set aside. In a separate bowl, mix together your sugar + oil + warm water*. Add the wet mixture to the dry, and mix until fully incorporated - but don’t over-mix! Add and fold in your chocolate. Line a large or two small baking sheet(s) with parchment paper, and scooping your cookie dough - scoop a Tablespoons’ worth, and roll between your palms. Place the balls on the baking sheets and slightly flatten using your palm. Bake your cookies for 15 minutes - and enjoy.
* make sure that your water is not cold, because cold water will Harden your melted coconut oil and the texture will be wrong. When first testing this recipe, it happened to me the first few times and then I realized it was the water.
