Apple pie is a cult classic. An American icon. And by George, I think i’ve nailed it.

I honestly can’t remember ever really eating pie - like I said, it’s an American classic, and I didn’t really grow up enjoying American comfort food. Pie was something that never really caught my interest - to be honest, a lot of pies have always grossed me out. I never really had a good apple pie, I vaguely remember enjoying a blueberry pie once or twice, and just the sight of pumpkin pie makes my stomach flip. So, needless to say, pie has never really been on my radar for dessert.

Yet, I have been getting the most aggressive cravings for apple pie. Why? I have no idea.

Apple streusel, apple crumble, apple anything has always been my jam. Yet, like I mentioned, I didn’t grow up baking or eating pie, so it never really crossed my mind. But after seeing apple pie everywhere since Thanksgiving, I really wanted to give it a go, and make a simple and delicious vegan apple pie.

And my my, not to toot my own horn, but I feel inclined to say that this one’s a clear winner,

It has only a few ingredients, and is pretty darn simple to make as well. I used Bob’s Red Mill (love of my life) to make a deliciously flakey crust, and a simple apple mixture for the yummy filling. This was actually my first crack at making any kind of pie, and the lattice portion was intimidating me a bit - but I was actually surprised at how easy it is to do. I looked up a few lattice tips on Pinterest, but honestly I just ended up using my better judgement and trying it myself; and all went well!

Serve this bad boy with some vegan ice cream, and I promise it will knock. your. socks. off.

Apple Pie

INGREDIENTS:

CRUST:

3.5 cups all purpose flour

1 tsp salt

3 Tbsp sugar

8 oz melted vegan butter sticks

1/2 cup warm water

FILLING:

4 large apples

1/2 cup water

1/2 cup sugar

1 Tbsp apple cider vinegar

2 Tbsp coconut flour

1 tsp cinnamon

1/4 tsp nutmeg

INSTRUCTIONS:

Preheat your oven to 400F. For the crust, whisk together the flour, salt, and sugar. Add in the melted butter and water, kneading until a ball of dough is formed. In the meantime, slice up for apples and place them in a pan alongside the remaining filling ingredients, and allow the filling mix to boil until the apples are mostly soft. As for the dough, cut off about 1/4 piece and set aside. Flour your counter and rolling pin, and roll out your 3/4 amount of pie dough into a circle. Place it into your pie pan, cutting off any long edges. Once the apples are sautéed, place them into your pie pan. With the remaining 1/4 piece of pie dough, roll it out into a thin rectangle, and slice off strips to make the lattice. Bake the pie for about 20-25 minutes, or until golden!
