Let’s end the year on a sweet note, shall we?

I wanted to share one more cookie recipe before we step into the new year, because cookies are the best, no discussion needed. For the holidays, I wanted to make these blossom cookies that resemble those peanut butter - Hershey kiss cookies that we’ve all had before, but with a little twist. The base of this cookie is a simple, chewy sugar cookie, and the center is a brownie coconut truffle from Sejoyia. Not only is the cookie soft, but the coconut truffle in the center adds something extra to the cookie, and is just too dang delicious to be ignored.

You can make these as a last-minute New Years Eve treat, or just something to kick off the new year with! Whatever it is, I promise these will be gone in a matter of minutes, leaving your belly happy and satisfied.

Let’s bake one more time, for 2018’s sake.

Chocolate Coconut Blossom Cookies

INGREDIENTS:

1.5 cups all purpose flour

1 tsp salt

1/4 tsp baking soda

1/2 tsp baking powder

2/3 cup brown sugar

1/3 cup oil

1/2 cup water

2 bags Sejoyia brownie coco-roons

INSTRUCTIONS:

Preheat your oven to 350F. Line a baking sheet with parchment paper. In a medium sized bowl, whisk together the flour, salt, baking soda, baking powder, and set aside. In another bowl, mix together the sugar, oil, and water. Add the wet mixture to the dry, mixing until your dough has formed. Form about 12 cookie dough balls, and place them on your baking tray. Press a coco-roon into the center of each cookie, and bake for roughly 20 minutes.

Allow them to cool once they’re done baking - nobody like a burnt tongue.

These coco-roons take the cookies to the next level! The combination of chocolate, coconut, and sugar cookie is perfection.
