Cinnamon Swirl Bundt Cake (vegan)
Swirls of cinnamon, ribboned around a moist, fluffy cake. I think I'm ready for Fall. What about you?
This is a recipe that I actually developed last year, and has been a staple during the Autumn and winter season ever since. It may still be August, and just about 100 degrees outdoors on the daily, but I'm already mentally prepared for sweaters, tea, and everything cinnamon spiced. I've made this cake a few times for non-vegans, and have yet to hear any complaints - actually, it usually disappears in a matter of minutes, so I think it's safe to say that this cake is a crowd pleaser - for anybody.
I mean, is it the healthiest thing you could eat? Nah. Is it the perfect, healthy breakfast that we are told we should start the day with? Not a chance. But it. is. delicious. It's also super easy to make, with simple ingredients, and usually takes me a total of 10 minutes to prep, and before I even notice, I'm already popping the sucker into the oven.
Something that has always made me want to develop my own recipes, is the simplicity factor. When I would search for recipes in the past, or even when I seek some inspiration and/or something to make now, the one thing that stops me in my tracks is the ingredients list.
WHY OH WHY ARE THERE 15 FOREIGN AND/OR LUXURY INGREDIENTS IN A SIMPLE CHOCOLATE CHIP COOKIE RECIPE?
After much time looking for a recipe that suited my needs, I began feeling dismayed that most recipes, especially vegan ones, were filled with these fancy ingredients that the average person either does not have in their pantry, or simple cannot afford to buy on the regular. I seek simple recipes, with simple ingredients, that are simple to make, which in turn, will convince more people to make it themselves, rather than just admire the photo, and scroll on by.
Because, truthfully, does anybody have time for that kind of nonsense?

Cinnamon Swirl Bundt Cake
4 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 cup neutral oil
1 1/2 cup coconut sugar
1 1/2 cup + 6 Tbsp water
1 tsp cinnamon
1/4 cup coconut sugar
1 Tbsp cinnamon
Preheat your oven to 350*F. In a large bowl, whisk together your flour, baking soda, baking powder, salt, cinnamon, and set aside. In a smaller bowl, combine your oil, sugar, and water. Add your wet ingredients to your dry, and mix until fully incorporated, but don't over-mix the batter. In a tiny bowl, combine your cinnamon swirl mix of sugar and cinnamon. Add in about half of your batter to your bundt cake pan, and sprinkle the batter with Half of the cinnamon swirl mix. Then, pour in the rest of the batter, topping it off with the remaining cinnamon swirl mix. Bake your cake for around 45-50 minutes, and cook more or less as needed. Then just let it cool, and enjoy the goodness.
