I don’t know about you, but I am a huge fan of oatmeal cookies.

I though I would end this month off with an indulgent cookie - and boy, this does not disappoint. I added in a whole slew of ingredients to make them that much more interesting, and it was the best decision of the week. I added in some Alter Eco quinoa dark chocolate, chopped walnuts, and rolled oats to take these cookies to the next level.

The results were pretty dang spectacular.

I’ve shared my love for cookies on here plenty of times, but this recipe is seriously one of my top favorites now. I love any oatmeal cookie that is thrown my way, but with the chocolate filled with popped quinoa and crunchy walnuts, these bad boys cannot be easily forgotten.

Chocolate Chunk Walnut Oatmeal Cookies

INGREDIENTS:

1 cup all purpose or spelt flour

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/3 cup melted coconut oil

2/3 cup brown sugar

1/4 cup warm water

1/3 cup chopped chocolate

1/2 cup rolled oats

1/3 cup chopped walnuts

INSTRUCTIONS:

Preheat your oven to 350F. Line a baking pan with parchment paper and set aside. In a bowl, whisk together the flour, salt, baking soda, baking powder, and set aside. In another bowl, combine the sugar, melted oil, and warm water. Add the wet mixture to the dry, and mix. Fold in the chocolate, oats, and walnuts, and form cookie dough balls to place on your pan. The batter should make around 10-12 cookies. Bake for 12-14 minutes, depending on how crispy you like them.

Bake for 12-14 minutes, depending on how well done you like your cookies - I prefer them soft, so I only bake them for about 12.
