Date-Sweetened Chocolate Cupcakes with Chocolate Mousse Frosting (vegan)

Yes, you read that title right. The cakes are refined sugar free, and everything you’ve ever needed and more.

Happy 2019! I figured since it’s the new year, and it feels like the majority of people are starting off their new year by eating healthier, I would share treats this month that are naturally sweetened, and full of whole, nutritious foods, rather than anything refined. These chocolate cupcakes are sweetened with dates, and the chocolate mousse frosting is sweetened with maple syrup. They have a super simple list of ingredients, and are reeeaaaally easy to whip up.

Needless to say, there is no reason to not bake this month.

They’re fluffy, moist, and sweet thanks to the dates. I’ve always loved baking with dates, but these definitely have been my favorite recipe to date. They are a true competition for any store-bought chocolate cake mix, and taste better, if I do say so myself (I do).

Date-Sweetened Chocolate Cupcakes & Chocolate Mousse Frosting

CAKE INGREDIENTS:

1 cup dates

1 1/4 cup water

1 Tbsp baking powder

1/2 tsp salt

1/3 cup cacao powder

1 cup all purpose or spelt flour

FROSTING INGREDIENTS:

1 ripe avocado

1/4 cup plant milk

2-3 Tbsp maple syrup

2 Tbsp cacao powder

INSTRUCTIONS:

Preheat your oven to 350F. Line a muffin pan with liners - it makes about 9 cupcakes. In a food processor, blend together the dates and water. Add in the remaining cake ingredients, and pour the batter into the muffin liners. Bake the cupcakes for 20 minutes. While the cupcakes are cooling, blend together the frosting ingredients in a food processor until smooth.
