Cinnamon Raisin Granola (Vegan & GF)
I never buy granola.
For years now i’ve been making my own granola - and it’s the best. There are so many different brands and flavors to pick from at whatever grocery store you go to, but typically the ones on the shelves aren’t the healthiest. They’re either full of sugars and oils, or they’re just too darn expensive to begin with. Even with these reasons, I honestly just make granola at home because I enjoy it. Having freshly baked granola come out of the oven is one of the best feelings, and the smell is ah-mazing.
I’ve dabbled with some different varieties over time, but I typically make mine with either mashed banana or dates for sweetness. Add in some chopped nuts and maybe some dried fruit and BAM you’ve got yourself a delicious mix my friend.
This time, i’m doing a classic - cinnamon raisin.
It’s actually so ridiculously easy that you’ll be making it weekly, I promise.
Unless, of course, you have a moral or personal objection to raisins. Either way, I won’t judge.
Cinnamon Raisin Granola
1.5 cups rolled oats
1/2 cup chopped walnuts
1/3 cup raisins
1 large ripe banana
1/4 tsp sea salt
1/2 tsp cinnamon
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a large bowl, mash your banana until there’s no big clumps. Add in the remaining ingredients and mix so that the banana is fully coating everything. Place your granola mixture on your baking sheet, spreading out into an even layer. Bake your granola for roughly 20-25 minutes, flipping the granola halfway through with a spatula. Allow the granola to cool before putting into an air-tight container.
