Surprise surprise, we have another chocolate recipe on our hands.

BUT HEAR ME OUT.

Triple chocolate? Hell yes. Sweetened only with maple syrup? Yup, I can see you rushing into the kitchen and diving for that mixing bowl. I figured as much.

Not only are these cupcakes full of simple and wholesome ingredients, but they’re sweetened with maple syrup and apple sauce, and topped with an avocado mousse frosting. Oh, and they’re filled with chunks of Alter Eco dark chocolate because clearly I was unable to contain my chocolate-loving self. I seriously cannot stop making sweets that are sweetened with natural sugars, and I don’t even want to. Who doesn't want cake that’s good for you?

Triple Chocolate Cupcakes

CUPCAKE INGREDIENTS:

3/4 cup all purpose flour

1/4 cup cacao powder

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1/3 cup apple sauce

1/3 cup maple syrup

1/4 cup warm water

1 Tbsp melted coconut oil

1 Tbsp apple cider vinegar

1/2 bar Alter Eco dark chocolate - chopped

FROSTING INGREDIENTS:

1/2 large, ripe avocado

3 Tbsp maple syrup

2 Tbsp cacao powder

1/4 cup plant milk

INSTRUCTIONS:

Preheat your oven to 350F. Line your muffin pan with cupcake liners - it should make about 10 cupcakes! In a medium bowl, whisk together the flour + cacao + baking soda + baking powder + salt and set aside. In another bowl, mix together the remaining ingredients except for the chocolate. Add your wet mixture to your dry and mix until everything if fully incorporated - but don’t over-mix! Fold in the chopped chocolate. Fill up your cupcakes about 3/4 of the way full, and bake for 20-25 minutes - I always check by placing a toothpick in one of the cake; if it comes out clean, they’re done! As for the frosting, simply place all of the frosting ingredients in a food processor and blend until smooth - pipe your cupcakes once they have completely cooled!

I used Alter Eco’s Super Blackout dark chocolate in my batter - but it’s up to you!

Allow your cakes to cool completely before piping on the frosting - nobody wants melted frosting on their cupcake!
