Oatmeal Walnut Raisin Cookies (Vegan)

I have a new cookie recipe here for ya - and it’s glorious.

Here, low and behold, I have made the perfect oatmeal cookie. Chewy in the middle, a bit crispy on the edges, it’s everything you want and more. Of course, I took liberties and made this simple oatmeal cookie that much more delicious. Adding in a pinch of cinnamon, a handful of chopped walnuts and a generous dose of raisins, and you. will. be floored.

I promise. Of course, eat some cookies first. You’ll thank me later.

Oatmeal Walnut Raisin Cookies

INGREDIENTS:

1 cup all purpose or spelt flour

1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/3 cup melted coconut oil

2/3 cup brown sugar

1/4 cup warm water

1/3 cup raisins

1/2 cup rolled oats

1/3 cup chopped walnuts

INSTRUCTIONS:

Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. In another bowl, mix together the sugar, oil, and water. Add the wet mixture to the dry, and fold in your raisins, walnuts, and oats. Roll out your cookie dough balls with a tablespoon, and place them on your baking sheet. Bake for 12-13 minutes!

Fold in the extra fix-ins! They take these cookies from great to  spectacular.

Bake only for 12-13 minutes! If you like really crispy cookies, you could add an extra minute but they’re best when they’re still a bit soft.
