Salted Tahini Chocolate Chip Cookies (Vegan)

What’s better than a chocolate chip cookie? One that’s sweet and salty, thank you very much.
Chewy in the middle and crispy on the edges, these cookies are the perfect treat. Filled with melted salty dark chocolate from Alter Eco, and creamy tahini, these cookies have the best of both worlds. For this recipe, I used a cookie scooper rather than rolling out the cookie dough in my hands or using a tablespoon, and it made all the difference! They didn’t spread as much and were a bit smaller, but I definitely liked them a bit better than my usual method. I sprinkled a bit of sea salt on top of each cookie once they were out of the oven, and oh my gawd, they were glorious.
Salted Tahini Chocolate Chip Cookies
1 1/4 cup all purpose or spelt flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup melted coconut oil
2/3 cup brown sugar
2 Tbsp tahini
1/4 cup warm water
1 bar salted Alter Eco dark chocolate, chopped
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, salt, baking soda, and baking powder. In another bowl, mix together the sugar, oil, tahini, and water. Combine the wet mixture to the dry, and fold in the chopped dark chocolate. Scoop your cookies onto the baking sheet using a cookie scooper, or a tablespoon. Bake for about 13-15 minutes, depending on how crispy your like the edges, and allow them to cool.
