They’re the best. Nuff’ said.
Sweet and chewy, medjool dates literally taste like caramel - but in fruit form. If that’s not some sort of witchcraft than I don’t know what is.
I love snacking on dates for some quick energy or just having a few as dessert when I crave something sweet; regardless, they’re the perfect treat and made even better with peanut butter and chocolate. This is the kind of thing that is so simply its silly to make a recipe for, but I love it too damn much not to share it, ya know? I mean, this combination is so killer y’all will be making this for dessert weekly. Or daily.
Stuffed with salty peanut butter and topped with Alter Eco dark chocolate, they’re too good to skip over.
Chocolate Coated Peanut Butter Stuffed Dates
Salty natural peanut butter
1 bar Alter Eco 90% dark chocolate
Chop up your dark chocolate and melt in the microwave or on a double boiler. Set the melted chocolate aside. Open up your dates and remove the pits - make sure they're not completely spit in half and still intact a bit so your peanut butter doesn’t come out. Stuff with a teaspoon-ish of peanut butter. Drizzle some chocolate over the dates and place into the fridge for a few minutes for the chocolate to harden. Add some more layers of chocolate if your prefer - it’s up to you! Then just enjoy.
