Blueberry Buckwheat Pancakes (Vegan & GF)

Buckwheat pancakes are the absolute best. Add in some blueberries? They’re irresistible.

Whenever I feel like making pancakes, they’re typically buckwheat - fluffy and chewy, they have a hint of a nutty flavor that’s the absolute best. Filled with blueberries and topped with vegan yogurt, they’re even better than before! Drizzle some maple syrup over that stack of goodness and you’ve got yourself the best breakfast/brunch you’ve had in a while.

Blueberry Buckwheat Pancakes

INGREDIENTS:

1/2 cup oats

1/2 cup buckwheat flour

1/2 ripe banana

1 cup water

1 Tbsp baking powder

1 Tbsp flaxseed

1 Tbsp apple cider vinegar

INSTRUCTIONS:

Blend all of these ingredients in a food processor and let the batter sit for around 10 minutes. Preheat your pan for about 2 minutes on medium/high heat and start cooking! Flip the pancakes when the top forms bubbles and the edges begin to dry up.

Add whatever toppings you prefer! I added blueberries since the cakes have blueberries in them, but you can add whatever toppings you like.
