Blender Oat Pancakes (Vegan + GF)

Brunch has never been so easy.

These pancakes are a recipe that I’ve been making since I first went vegan years ago - I started making them as the three ingredient pancakes that surfaced all over the web, but as time went on I added a few extra ingredients to make them the fluffy flapjacks they are today. They’re the simplest thing to make for breakfast when you’re feeling like something a little extra, but don’t want to waste the entire morning cooking up a big meal. Literally, you just blend all of the ingredients in your blender and then start to cook those bad boys up!

Top with some fresh berries and maple syrup and you’ll be hooked.

Blender Oat Pancakes

INGREDIENTS:

1 cup oats

1/2 ripe banana

1 tsp baking powder

1 tsp apple cider vinegar

1 Tbsp flaxseed meal

pinch of salt

INSTRUCTIONS:

Blend all of these ingredients in a blender and allow the batter to sit for about ten minutes. Then, preheat your non-stick pan on medium-high heat for about 2 minutes, and begin cooking your pancakes! Scoop up about 2 Tbsp worth of batter for each flapjack, and flip when bubbles form on the top and the edges begin to be dry.

Fluffy and sweet - they’re the best breakfast! I topped mine with crunchy + salty peanut butter, chopped strawberries, and maple syrup.
