Fluffy Quinoa Pancakes (Vegan + GF)

Nothing beats fluffy pancakes on Sunday morning.

Although, I’ve gotta say, these quinoa pancakes might be the new brunch staple you’ll be making every weekend. They take your classic lazy morning pancakes to the next level.

I’ve made pancakes with a variety of flour bases before - buckwheat (a personal fave), oat, spelt, even rice. The difference with quinoa is that it gets about twice as fluffy as all of these combined.

Not even kidding, these suckers rise before your eyes. And it is glorious.

Not only that, but quinoa flour has a very unique flavor that is delish in sweets. Topping these pancakes with chopped fruit, nut butter, and a friendly pour of maple syrup will make you thank the gods above for such a creation.

So get going! Take out the pans and apron because you’ll wanna make this for breakfast.

Fluffy Quinoa Pancakes

INGREDIENTS:

1/2 cup quinoa flour

1/2 cup oat flour

1/2 ripe banana

1 tsp baking powder

1 tsp flaxseed meal

1 tsp apple cider vinegar

pinch of salt

1 Tbsp sweetener (optional)

INSTRUCTIONS:

In a blender, mix together all of the ingredients. Allow the batter to sit for around ten minutes. Then, preheat your non-stick pan on medium-high heat for about 2 minutes before pouring your batter. Pour about 2-3 Tbsp worth of batter for each pancake, flipping when bubbles form on the top and the edges become a bit dry.
