Honestly, oatmeal cookies are the superior cookie.
There. I said it.
Whether it’s an oatmeal cookie that has nuts or raisins or even chocolate chips, somehow the oatmeal cookie always wins - they’re extremely chewy, and the texture is incredible.
This oatmeal cookie is packed with sliced almonds, old fashioned oats, and salted almond dark chocolate from Alter Eco - an epic combo, if you ask me.
Chewy and sweet - these cookies are the. best.
Oatmeal Almond Chocolate Chunk Cookies
1 1/4 cup all purpose or spelt flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup melted coconut oil
2/3 cup brown sugar
1/4 cup warm water
1/2 cup old fashioned oats
1/3 cup sliced almonds
1 bar salted Almond Alter Eco dark chocolate, chopped
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, salt, baking soda, and baking powder. In another bowl, mix together the sugar, oil, and water. Combine the wet mixture to the dry, and fold in the chopped dark chocolate, oats, and almonds. Scoop your cookies onto the baking sheet using a cookie scooper, or a tablespoon. Bake for about 13-15 minutes, depending on how crispy your like the edges, and allow them to cool.
