Chocolate Mint Ice Cream Whoopie Pies (Vegan)

Alrighty folks. I’ve got a goodie for ya.
I’ve been wanting to make ice cream sandwiches for a long time now - especially with this overwhelming heat wave hitting us here in NC. I wanted it to be a bit like a cookie sandwich, but the cookies needed to be fluffy and soft, as opposed to a regular chocolate chip cookie recipe, ya know? I had a few variations I wanted to try, but the one that I was most eager to do was based on my dark chocolate mint cookies - but, rather than using oil, I would replace it with apple sauce.
Oh. my. gosh. they turned out perfect.
Fluffy and soft, a bit crispy on the edges, they puffed up absolutely perfectly and the texture is exactly what I was looking for.
So here we are.
Filled with Alter Eco’s new Superdark crisp mint chocolate, and filled with dairy-free mint chocolate ice cream, they are literally the best treat to make for the summertime.
I devoured them.
Chocolate Mint Ice Cream Whoopie Pies
1 cup all purpose flour
1/4 cup cacao powder
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup apple sauce
2/3 cup cane sugar
1/4 cup water
1 bar Alter Eco Superdark mint crisp chocolate - chopped
Preheat your oven to 350F and line a baking sheet with parchment paper. In a medium sized bowl, whisk together the flour, baking powder, baking soda, cacao powder, and salt and set aside. In another bowl, combine the sugar, apple sauce, and water. Add the wet mixture to the dry, folding in your chopped chocolate. Scoop about 2 Tbsp worth of batter onto your baking sheet, or use a cookie scooper, and allow them to bake for about 20 minutes. Let them cool before filling with ice cream - ya don’t want it to melt!
