Peanut Butter and Strawberry Jam Crumble Bars (Vegan)
Ever since the warm weather has hit, I’ve been going to the local farms near me and getting the largest bucket of freshly picked strawberries around.
With that being said, sweet treats filled with said berries are gonna be a weekly regular.
Before moving down to North Carolina, I was familiar with just getting store bought strawberries. A few weeks ago, when Summer came down here in full swing, I stopped by the strawberry farm I would always pass on my way to work and it was probably the best decision I made that whole week.
Fresh strawberries have nothing on conventional. Nuff’ said.
These bars are so easy to make too, you can make them weekly and serve everyday as a snack or dessert! They’re also sweetened only with maple syrup and other fruit, so it’s super healthy too.
I also wouldn’t judge if you served them with a giant scoop of vanilla ice cream. Just saying.
PB & J Crumble Bars
1/4 cup melted coconut oil
1/4 cup smooth peanut butter
1/4 cup maple syrup
1 cup all purpose flour
1/2 cup nut meal
1/4 cup sliced almonds or peanuts
1 tsp baking powder
1/2 tsp salt
2 cups strawberries
2 Tbsp chia seeds
1 Tbsp maple syrup
Preheat your oven to 350F. Line a loaf pan with parchment paper and set aside. To make the crumble mix, in a medium sized bowl whisk together the flour, nut meal, baking powder, sliced nuts, and salt. Then, pour in the melted coconut oil, peanut butter, and maple syrup. In your food processor, blend together the jam ingredients. Separate the crumble mixture into two parts. For the first part, pour it into your loaf pan and press down firmly into the pan. Then, top it with your jelly mix, and finally, use the remaining crumble mixture to crumble on top of the jam layer. Pop your loaf pan into the oven and allow it to bake for 30-35 minutes! Then, let it cool before slicing.
