Salted Peanut Butter Chocolate Chip Cookies (Vegan)

I don’t know about you, but for me, chocolate + peanut butter are always the best combination. No further question.
I made these cookies last month before I headed off to Europe to visit my family for a few weeks, but let me tell you something - they’re my new favorite. I don’t know why it took my so long to add peanut butter to my favorite cookies, but I’ve seriously been missing out because they are the best. I added some peanut butter into my classic cookie batter, as well as some chopped salted almond dark chocolate from Alter Eco, and once those bad boys pop out of the oven I took some liberties and drizzled peanut butter on top as well.

Salted Peanut Butter Chocolate Chip Cookies
1 cup all purpose
1/4 cup cacao powder
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/3 cup melted coconut oil
2/3 cup brown sugar
3 Tbsp creamy peanut butter
1/4 cup warm water
1 bar salted almond Alter Eco dark chocolate, chopped
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, cacao powder, salt, baking soda, and baking powder. In another bowl, mix together the sugar, oil, peanut butter, and water. Combine the wet mixture to the dry, and fold in the chopped dark chocolate. Scoop your cookies onto the baking sheet using a cookie scooper, or a tablespoon. Bake for about 13-15 minutes, depending on how crispy your like the edges, and allow them to cool. Drizzle some peanut butter on top - it’s the best!
