Double Chocolate Buckwheat Waffles (Vegan + GF)

Since getting my teeny tiny waffle maker, I have been whipping up waffles out the wazoo. Buckwheat is always my favorite flour to use in any breakfast dish, so I figured one filled with chocolate will be extra delish.
And my hypothesis proved successful.
These waffles are crispy on the edges and fluffy in the middle, as well as filled with melted dark chocolate from Alter Eco, and extra chocolatey goodness from the cacao powder in the batter. They’re delish by themselves or with toppings, or even as a waffle ice cream sandwich. Seriously, you can go as wild as you want.
LET’S GET COOKING!
Double Chocolate Buckwheat Waffles
1/2 cup oats
1/2 cup buckwheat flour
2 Tbsp cacao powder
1 tsp baking powder
1 tsp apple cider vinegar
1 tsp flaxseed
1/2 ripe banana
3/4 cup almond milk
1-2 Tbsp maple syrup or sweetener of choice
1/3 cup chopped Alter Eco dark chocolate
Blend all of the ingredients together in a food processor - then, allow the batter to sit while you preheat your waffle maker. Fold in your chopped chocolate into the batter before cooking. Put a bit of coconut oil on your waffle maker so that the waffles are easier to take out! Cook according to the waffle maker’s instructions.
