Buckwheat Waffles (Vegan + GF)
I recently got a mini waffle maker and it is the cutest purchase I have ever made.
I was perusing along in Home Goods the other week, minding my own business, when I came across the tiniest little bubble-gum pink mini waffle maker. It makes one waffles at a time, and each one is a perfect circle. Not only was it $6.99, but it was pink and tiny.
Needless to say, I didn’t think much about the purchase. She was mine.
Yet, because it’s been so unbearably hot here, It' took me a week or two to finally take it out of the box and put it to use. I had an off day, and time to kill in the morning, so why not? I haven’t made waffles in the longest time. There was actually one point a few years ago - before I went vegan - that I would wake up extra early each morning before school and make waffles that were only made of eggs and banana; I think it was some two-ingredient recipe that had gone viral? Not sure, but I do remember months of enjoying waffles like it was nobody’s business.
This time though, the recipe is much better, I promise. No eggs involved.
The recipe for these waffles is similar to my buckwheat pancakes, but crispy and golden like only waffles can be.
1/2 cup oats
1/2 cup buckwheat flour
1 tsp baking powder
1 tsp apple cider vinegar
1 tsp flaxseed
1/2 ripe banana
3/4 cup almond milk
Blend all of the ingredients together in a food processor - then, allow the batter to sit while you preheat your waffle maker. Put a bit of coconut oil on your waffle maker so that the waffles are easier to take out! Cook according to the waffle maker’s instructions.
