I don’t know why it’s taken me like three months to share this amazing French toast but better late than never, right?

I made this French toast with some crispy sourdough literally in like June or July, absolutely loved it, went to Europe to see my family and forgot to share the goodness :(

But I remembered the other day so here we are and i’m ready to share.

It’s quiet literally the easiest thing to make - I really just soaked some sourdough in a batter I blended up in my mixer, allowed it to soak for a few minutes, and then cooked on a pan until it got golden and crispy. The batter is super easy to whip up too, I just used simple ingredients like banana, almond milk, and flaxseeds - seriously, it’s dumb easy and tastes so good you’ll be wondering why you haven’t tried it before. Plus, I just think French toasts kicks ass in general but vegan ? So so so good.

FIRE UP YOUR PANS AND GET TO SOAKING YOUR BREAD

Vegan French Toast

INGREDIENTS:

1 cup plant milk

1 Tbsp ground flaxseed

1/2 ripe banana

1/4 tsp cinnamon

1 Tbsp maple syrup

pinch of salt

Bread of choice

INSTRUCTIONS:

In a blender, mix all of your ingredients together and once blended, pour into a baking dish. Use whatever bread your prefer, and soak it in the batter on each side until fully coated. In the meantime that your bread is soaking, preheat your pan on medium heat, slightly greasing it with coconut oil or fat of choice. Then, once your pain is hot, take your bread out, let the batter drip off a little, and pop onto your pan! Let the bread cook on each side until golden brown.

Soak your bread in your batter until fully coated! Let some drip off before putting into your pan so it’s not overly wet.

Then, just add your toppings! I drizzled mine with peanut butter, vegan yogurt, strawberries, sliced almonds, and a generous drip of maple syrup.
