Crunchy Peanut Butter Stuffed Chocolate Cookies (Vegan)

I put peanut butter on literally everything, it’s my kryptonite. I dunno why it’s taken me so long to stuff cookies with it but I have finally seen the light and here we are.
And oh my gosh, they are the best things ever ??
I have also been using Alter Eco chocolate for literally all of my cookies because it’s my favorite vegan friendly chocolate brand, but I’ve never used my favorite bar from them in cookies - the dark chocolate quinoa! It’s so good on it’s own, and because it’s so crunchy I never really thought about baking with it.
And I have surely been missing out.
These cookies have chopped quinoa dark chocolate and rich peanut butter in the center, making them so damn good you’ll have to resist eating the whole tray.

Crunchy Peanut Butter Stuffed Chocolate Cookies
1 1/4 cup all purpose flour
1/4 cup cacao powder
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/3 cup melted coconut oil
2/3 cup brown sugar
1/4 cup crunchy peanut butter
1/4 cup warm water
1 bar Alter Eco quinoa dark chocolate, chopped
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside. In a medium bowl, whisk together the flour, cacao powder, salt, baking soda, and baking powder. In another bowl, mix together the sugar, oil, and water. Combine the wet mixture to the dry, and fold in the chopped dark chocolate. Scoop your cookies onto the baking sheet using a cookie scooper, flatten a bit and make a shallow dip in them in order to place a tsp worth of peanut butter, and then scoop more batter on top to cover the pb. Do this with every cookie, and then just pop into the oven for 20-25 minutes!
